Abstract

          กระบวนการอบแห้งเป็นกรรมวิธีถนอมอาหารโดยการลดความชื้นเพื่อยับยั้งการเจริญเติบโตของจุลินทรีย์ โดยทั่วไปมักใช้อากาศร้อนเป็นตัวกลางในการอบแห้ง อย่างไรก็ตามปัจจุบันมีงานวิจัยเกี่ยวกับการนำไอน้ำร้อนยวดยิ่งมาประยุกต์ใช้ในการอบแห้งมากขึ้น เนื่องจากการอบแห้งด้วยไอน้ำร้อนยวดยิ่งมีข้อดี คือ ไม่เกิดปฏิกิริยาออกซิเดชัน ซึ่งทำให้อาหารเสื่อมสภาพ และการควบแน่นของไอน้ำในช่วงต้นของการอบแห้งยังเป็นการฆ่าเชื้อ กำจัดกลิ่น หรือเป็นการลวกผลิตภัณฑ์ไปในตัว ในระยะแรกของการศึกษาวิจัยการอบแห้งด้วยไอน้ำร้อนยวดยิ่งนั้นส่วนมากเป็นการอบแห้งที่ความดันบรรยากาศ ต่อมาจึงพัฒนาเป็นการอบแห้งที่ความดันต่ำกว่าความดันบรรยากาศ จนเมื่อเร็ว ๆ นี้จึงได้มีการนำแหล่งความร้อนอื่นมาใช้ร่วมกับการอบแห้งด้วยไอน้ำร้อนยวดยิ่งเพื่อเพิ่มประสิทธิภาพในการประหยัดพลังงาน จากงานวิจัยที่ผ่านมา พบว่า เมื่อเปรียบเทียบกับการอบแห้งด้วยอากาศร้อน หรือการอบแห้งแบบสุญญากาศ การอบแห้งด้วยไอน้ำร้อนยวดยิ่งสามารถปรับปรุงคุณภาพของผลิตภัณฑ์หลังการอบแห้งได้ ซึ่งลักษณะจะแตกต่างกันไปตามชนิดของผลิตภัณฑ์  Drying process is a food preservation method by decreasing moisture content to inhibit microorganism growth. Hot air is generally used as a medium for the drying process. However, during process. However, during the past decades superheated steam has been Increasingly used in the drying research works. Due to the absence of oxygen, superheated steam drying permits no oxidative reaction to degrade food quality and steam condensation at the early period of drying allows pasteurization, deodorization, and blanching of food products. At the early stage of application, superheated steam drying was operated at atmospheric pressure and it was later operated at sub-atmospheric pressure. Until quite recently, other heating sources have been combined with the superheated steam to enhance energy efficiency of the drying system. The reviewed research articles indicated that compared to hot air and vacuum drying, superheated steam drying provided products with some superior properties depending on drying materials.
